From the highlands of Ethiopia’s celebrated Yirgacheffe region, this washed lot comes from the idido where small holder farmers cultivate coffee at elevations of 1850-1880 masl. Grown in the region’s cool climate and lush highlands, the cherries develop slowly, contributing to the coffee’s vibrant acidity and refined sweetness. Only carefully selected ripe cherries were used for this special prep lot
After harvest, the coffee is processed using a traditional washed process including fermentation and slow drying on raised beds. For the special prep selection, cherries from a limited number of small holders are separated from standard production and meticulously sorted to achieve exceptional clarity, cleanliness and balance in the cup.
The profile is elegant and expressive featuring delicate florals like jasmine pearls and bright citrus acidity. As the cup cools, soft cheesecake notes and a silky body emerge, creating a layered and refined Yirgacheffe experience
